JB's handmade suya spice mix (aka 'yaji'), 300g spice shaker.
This spice mix can be used to make authentic suya (Nigerias version of a kebab), but goes equally as well on chicken, fish or vegetables. You're only limited by your imagination. You can try it on chips to add a spicy twist, or in mac and cheese for some extra flavour and warmth.
To make beef suya: Thinly slice some strips of beef. Drizzle some peanut oil over the beef and mix in. Pour suya spice on a plate. Dip the beef in the suya spice coating it well on one side, flip it and repeat, then grill over charcoal until well done. For the authentic taste, serve with sliced onion and tomatoes.
Ingredients: peanuts (kuli kuli), garlic powder, onion powder, salt, ginger powder, birds eye chilli, white pepper, paprika, selim pepper, cloves, nutmeg .
